This is a fantastic dinner. We love Mediterranean food and this fits the bill!

Ingredients For mediterranean chicken over rice, instant pot

  • CHICKEN
  • 2 lb
    chicken breasts, boneless and skinless
  • 1 md
    onion, chopped
  • 3 clove
    garlic, pressed or minced
  • 2 Tbsp
    butter
  • 1/2 c
    water
  • 1 Tbsp
    roasted garlic and herb seasoning
  • SAUCE
  • 10 oz
    container garlic hummus
  • 1/2 c
    nonfat plain greek yogurt
  • 1/2 c
    sour cream
  • 3/4 c
    lemon juice
  • 1 tsp
    kosher salt
  • 2 Tbsp
    dried dill
  • 1/2 tsp
    dried oregano
  • 1 tsp
    garlic powder
  • TOPPINGS
  • 2
    tomatoes chopped
  • 1
    seedless cucumber, chopped
  • 1 pkg
    feta cheese
  • RICE
  • 2 c
    hot cooked rice

How To Make mediterranean chicken over rice, instant pot

    In the instant pot insert, turn on to sear. Melt butter. Add onion and cook and stir frequently until softened. Add garlic and cook and stir for one minute.

    Turn off Instant Pot. Add chicken, water, and seasoning. Place lid, make sure it is sealing position. Turn on to high pressure for 9 minutes. Allow to natural release 10 minutes before doing a quick release.

    While chicken is cooking make sauce. In a medium mixing bowl combine all the sauce ingredients and gently whisk until combined. Set aside.

    After all the pressure has been released from the Instant Pot, shred the chicken in the instant pot. Stir the shredded chicken around so it absorbs the juices.

    To serve: place some rice in a bowl. Top with some chicken. Top with toppings. Spoon some sauce over top. Enjoy!
