Ingredients For mediterranean chicken

1 cbrown rice, uncooked

3/4 lbboneless, skinless chicken breasts, cut into bite sized cubes

1/2 tspblack pepper

3 clovegarlic, minced

1 czucchini, cut lengthwise and sliced

1/2 lbsliced mushrooms

1/2 cdiced onion
-
1 candiced tomatoes with juice

1 cchicken broth

1 Tbspdried basil

1/2 tspsalt

1 Tbspolive oil
How To Make mediterranean chicken

1Cook rice following directions on the package.

2Cook chicken in a large nonstick skillet, over medium high heat for about 4-5 minutes. Remove from pan.

3Add oil and garlic to pan and saute for 30 seconds.

4Next add zucchini, onion, and mushrooms and continue to cook for minutes.

5Add tomatoes and chicken to the skillet. Add broth, basil and salt.

6Bring to a boil, reduce heatl and simmer for 6-7 minutes.

7Add the rice and mix together. Serve hot.
