In these days and times of recessions another recipe to use your cold meat or leftovers. My family love them both in summer and in winter. In summer with a nice green salad In winter after a nice bowl of cream vegetable soup.

Ingredients For meat cakes

1/4 lbcold meat
-
1/4 lbmashed potatoes
-
egg,stock or gravy to bind
-
little finely chopped onion
-
pinchmixed herbs
-
salt & pepper to taste
-
breadcrumbs to coat
How To Make meat cakes

1Mix the minced meat, potatoes,flavouring and seasoning, and make into a firm paste with the egg or stock. Divide into 6 or 8 portions and form each into a small round shape. Coat with the remainder of the egg and dip in breadcrumbs. Fry in deep or shallow fat until golden brown. Serve on its own or with thick brown gravy. Useful hints: If cold beef is used, a little beef sausage meat can be added to the mixture if desired.
