Ingredients For mary's vinegar chicken

  • 2 Tbsp
    olive oil
  • 3 3/4 lg
    whole chicken, quartered
  • salt
  • freshly ground black pepper
  • 2 Tbsp
    butter
  • 4 clove
    garlic, peeled and halved
  • 2 c
    sherry vinegar
  • fresh basil leaves

How To Make mary's vinegar chicken

    Preheat over to 450 degrees. In a large ovenproof skillet, heat olive oil over medium-high heat until smoking.

    Season chicken with salt and pepper.

    Place chicken pieces skin-side down in the pan and sear until golden brown, about 5 minutes. Add butter and garlic cloves and cook 2 more minutes.

    Add vinegar (carefully)

    Turn chicken over and put pan in oven. Cook for 20 to 30 minutes or until an instant-read thermometer indicates 160 degrees. Garnish with basil. Serve with french fries or mash potatoes.
