I adapted this recipe from one found on the Internet several years ago. It quickly became a family favorite. It is an easy yet elegant entree, especially for garlic lovers! So simple, yet so good! Be sure to use fresh grated Parmesan; it does make a difference.

Ingredients For martha louise's garlic chicken

4 clovegarlic, minced

1/4 colive oil (extra virgin prefered)

1/2 cbread crumbs, dried

1/2 cfresh parmesan cheese, grated

2chicken breasts, halved and pounded thin
How To Make martha louise's garlic chicken

1Pre-heat oven to 350 degrees.

2In skillet warm garlic in olive oil for a few minutes to blend flavors. Dip chicken pieces in oil.

3Combine bread crumbs and Parmesan cheese. Coat chicken well in crumbs. Place chicken in shallow baking dish.

4Bake for 20 - 25 minutes, or until just tender. *Chicken may also be sauteed in skillet, 10 - 15 minutes or until cooked through. Great with rice or noodles.
