This recipe was given to me by dear friends who grilled chicken tenders for the graduation party of a mutual friend. I marinate the chicken tenders and my husband grills them, although they can also be grilled on one of those "George Foreman" indoor grills. The salsa is something I added as a side that is a nice compliment to the sweet marinade. And for those watching their fat calories, you can substitute fat free Italian Salad Dressing without affecting the flavors at all. This is requested for most special events and birthdays in our family. Good with alfredo on pasta on the side.

Ingredients For marinated chicken with fresh italian salsa

4 lbfresh or frozen chicken tenderloins

1 - bottleitalian salad dressing - 16 oz.

1/2 clight brown sugar/ firmly packed

1/2 choney
-
1/2 csoy sauce -can substitute worcestershire sauce

1 - 2cloves of garlic, minced or finely chopped (optional)
- FRESH ITALIAN SALSA INGREDIENTS

6 or 7ripe roma tomatoes, seeded and chopped
-
2 Tblspchopped green pepper
-
2 Tblspchopped sweet onion
-
1/8 tspred pepper flakes
-
1clove garlic, minced or chopped fine (more if you like)

1 Tbspchopped fresh basil, or 1 tsp. dried basil (more if you like it

3 Tbspitalian salad dressing (bottled or home made)
-
1/2 Tbspgrated parmesan cheese
-
1 tspfresh lemon juice
-
salt and fresh ground pepper to taste
How To Make marinated chicken with fresh italian salsa

11 to 24 hours ahead, mix marinade ingredients and pour over chicken. Refrigerate. Sealing it all in a ziploc bag is nice, and make sure to poke at it a few times to keep redistributing the marinade.

2At least an hour before serving, chop the Italian Salsa vegetables and stir in the other ingredients. Chill until serving time.

3Place the chicken on the grill directly from the marinade. Discard marinade. Grill chicken over medium coals or the medium low setting on your grill. Do not baste chicken with this marinade, unless you boil the marinade for a while first. However, I still would not really recommend using it unless you saved some out before adding the chicken initially.

4Grill chicken in batches, and a crock pot on a low setting does a nice job of keeping it all hot until you complete the grilling.

5Serve with the fresh salsa on the side. A baked potato and salad complete the meal, or my family likes Alfredo sauce on pasta as a side dish with this meal. Enjoy!
