Just wanted something different, digging through the cabinets and found I had 2 bottles of margarita mix so I thought oh heck why not, marinade it was

Ingredients For margarita chicken (kat's)

  • 12
    chicken legs ( or your choice of peices)
  • 1 1/2 c
    margarita mix
  • 2 Tbsp
    honey
  • 2 Tbsp
    ginger ( grated)
  • 3 Tbsp
    lime juice ( concentrate)
  • 1 1/8 tsp
    kosher salt
  • 1 1/4 tsp
    cayenne pepper
  • GLAZE( OPTIONAL)
  • 2 Tbsp
    honey
  • 2 Tbsp
    lime juice ( concentrate)

How To Make margarita chicken (kat's)

    In a large ziploc bag add everything except chicken pieces and mix well, add chicken pieces and coat well, place in fridge for 4-6 hours if possible.

    Place in baking dish and bake 25 minutes or until done, the last 5 minutes mix the glaze and brush on chicken. This can be grilled also
