Ingredients For mandarin chicken

4boneless, skinless chicken breasts, about 1 pound

1 can(11 ounce) mandarin oranges, juice drained and reserved

1/2 tsppepper

2 Tbsporange juice concentrate

oz(12 ) pineapple juice

2 Tbsporange marmalade

1 tspcrushed red pepper (optional)

1 Tbspcorn starch

1/2 tspsalt

1/2 tspground ginger

How To Make mandarin chicken

1Combine drained juice, 6 ounces of the pineapple juice, and pepper. Pour over chicken, cover, and refrigerated 1-2 hours.

2Remove chicken; discard marinade. Heat oil in skillet, add chicken, and cook over medium heat until done, about 15 minutes.

3Stir remaining ingredients in a pan over high heat until thickened. Spoon sauce over chicken.
