I was craving Mexican food today. My husband and I collaborated to come up with this tasty low-fat recipe. I hope you all enjoy it as much as we did!

These quick and easy quesadillas may be a lightened-up recipe, but they're big in flavor. The seasoning on the chicken is a typical Mexican seasoning, but adding Creole spice too gives it a little something different. Lime juice adds a nice zing. The chicken breasts alone are so good we found ourselves sneaking bites and hoping we had enough left for the quesadilla. Layering the little bit of cheese, chicken, and black beans means layers of goodness inside the low-carb tortillas.

Ingredients For mamma's skinny quesadillas

  • SPICE MIX FOR CHICKEN
  • 1 tsp
    cumin
  • 1 tsp
    paprika
  • 1 tsp
    chili powder
  • 1 tsp
    Creole seasoning
  • salt and pepper, to taste
  • 1 lb
    chicken breasts
  • 1 Tbsp
    olive oil
  • 1/2
    lime
  • SKINNY QUESADILLAS
  • 5
    whole wheat low-carb tortillas
  • 2 c
    shredded Mexican blend cheese, low-fat
  • 1 can
    reduced sodium black beans (15 oz)
  • reduced fat sour cream
  • salsa (see my recipe for mamma's homemade salsa)

How To Make mamma's skinny quesadillas

  • Spice ingredients combined in a small bowl.

    Mix together dry ingredients in spice mix.
  • Spice mixture sprinkled onto the chicken breasts.

    Sprinkle spice mix on both sides of the chicken breasts.
  • Chicken cooking in a saute pan.

    Cook chicken on both sides in olive oil in a saute pan until done. Squeeze lime juice on chicken once cooked and turn off the heat.
  • Chicken cut into small pieces.

    Clean out saute pan and cut the chicken into small pieces.
  • Draining the black beans.

    Drain and rinse black beans and pat dry.
  • Cheese sprinkled on half of a tortilla.

    Cook quesadillas one tortilla at a time. Fold tortilla in half. Place in saute pan and open. Sprinkle some cheese on half of the tortilla.
  • Adding chicken to tortilla.

    Then add chicken.
  • Adding some black beans on top of chicken.

    Sprinkle in some beans.
  • Sprinkling more cheese.

    Add more cheese.
  • The other half of the tortilla folder over.

    Fold the tortilla over so that both halves are surrounding them yummy chicken, beans, and cheese.
  • Cooking the quesadillas in a covered pan.

    Place lid on saute pan. Cook each tortilla covered for about 2 minutes. Then carefully flip, replace lid, and cook for about one more minute.
  • Quesadilla with salsa and sour cream.

    Place each quesadilla on its own plate and top with sour cream and salsa. Cut in half, thirds, or quarters, and enjoy!
