I was craving Mexican food today. My husband and I collaborated to come up with this tasty low-fat recipe. I hope you all enjoy it as much as we did!

These quick and easy quesadillas may be a lightened-up recipe, but they're big in flavor. The seasoning on the chicken is a typical Mexican seasoning, but adding Creole spice too gives it a little something different. Lime juice adds a nice zing. The chicken breasts alone are so good we found ourselves sneaking bites and hoping we had enough left for the quesadilla. Layering the little bit of cheese, chicken, and black beans means layers of goodness inside the low-carb tortillas.

Ingredients For mamma's skinny quesadillas
- SPICE MIX FOR CHICKEN

1 tspcumin
-
1 tsppaprika
-
1 tspchili powder
-
1 tspCreole seasoning
-
salt and pepper, to taste

1 lbchicken breasts
-
1 Tbspolive oil
-
1/2lime
- SKINNY QUESADILLAS
-
5whole wheat low-carb tortillas
-
2 cshredded Mexican blend cheese, low-fat
-
1 canreduced sodium black beans (15 oz)
-
reduced fat sour cream
-
salsa (see my recipe for mamma's homemade salsa)
How To Make mamma's skinny quesadillas

1Mix together dry ingredients in spice mix.

2Sprinkle spice mix on both sides of the chicken breasts.

3Cook chicken on both sides in olive oil in a saute pan until done. Squeeze lime juice on chicken once cooked and turn off the heat.

4Clean out saute pan and cut the chicken into small pieces.

5Drain and rinse black beans and pat dry.

6Cook quesadillas one tortilla at a time. Fold tortilla in half. Place in saute pan and open. Sprinkle some cheese on half of the tortilla.

7Then add chicken.

8Sprinkle in some beans.

9Add more cheese.

10Fold the tortilla over so that both halves are surrounding them yummy chicken, beans, and cheese.

11Place lid on saute pan. Cook each tortilla covered for about 2 minutes. Then carefully flip, replace lid, and cook for about one more minute.

12Place each quesadilla on its own plate and top with sour cream and salsa. Cut in half, thirds, or quarters, and enjoy!
