Ingredients For madras chicken curry

  • 2 Tbsp
    ghee or oil
  • 1 c
    red onion chopped
  • 6 clove
    garlic
  • 3 Tbsp
    grated ginger
  • 28 oz
    can crushed tomatoes
  • 1 c
    heavy cream
  • 2 Tbsp
    madras curry powder
  • 1 Tbsp
    garam masala
  • 1 tsp
    salt
  • 1 Tbsp
    brown sugar
  • 2
    boneless skinless chicken thighs cut into cubes
  • 1 Tbsp
    lemon juice
  • 1/4 c
    fresh cilantro chopped
  • basmati rice and naan for serving

How To Make madras chicken curry

  • 1
    In a large Dutch oven or skillet add the ghee or oil. Add the red onion, garlic and ginger. Saute for about 10 minutes until onions are soft.

    Add the Madras curry powder, Garam Masala, salt and brown sugar. Add the crushed tomatoes, and heavy cream. Bring to a simmer and add the chicken pieces.

    Simmer for 15 minutes. Stir in the lemon juice. Garnish with Cilantro. Serve with Basmati rice and naan
