- FOR THE CHICKEN

1 lbchicken breast

1/8 cchicken broth

salt and pepper to taste

2 Tbsppoppy seed salad dressing

1 1/2 cbutter lettuce or romaine lettuce

2 cfresh spinach

1/2 cwalnuts

1 ptsliced strawberries

1/2 cpoppy seed salad dressing
How To Make maddy and bill's summer dinner salad

1Preheat oven to 425 degrees. Cut the chicken breasts into small thin strips and put in a bowl. Pour the chicken broth and 2 tablespoons Poppy Seed Dressing over the chicken. Sprinkle in a little salt and coarse black pepper to taste. Mix well.

2Put double thickness aluminum foil on a small baking sheet. Put the chicken mixture in the middle, and spread out evenly. Fold the sides of the foil up to form a little pouch, with the top left open. Bake for 20-25 minutes until the chicken is no longer pink. Let the chicken cool to room temperature. You can also cook this pouch on a grill.

3Slice the strawberries and Butter or Romaine lettuce, and put in a bowl. Add the spinach and cooled chicken slices.

4Mix a 1/2 cup poppy seed dressing into the bowl. Sprinkle with walnuts. I like to serve this with toasted bread on the side.
