It's important to stay fit and eat right My mother is 87-years-old. She has heart problems that can be partially controlled by diet. I learned that my mother has a valve that backflows and builds fluid around her heart when she eats salt. We weigh her every day to see how much fluid built up around her heart so we can adjust her salt intake. She can gain as much as five pounds of fluid overnight. She's only allowed 500 mg. of salt per meal, so, if I fix her a sandwich, two slices of bread are 170 mg. each, so whatever else goes on the sandwich cannot add over 330 mg. My recipe was a tasty hit.

    chicken, drumsticks
  • 4 clove
    garlic
  • 4 Tbsp
    onions, small white
  • 1/2 c
    honey
  • 1 Tbsp
    mrs. dash table seasoning
  • 1 Tbsp
    smart balance, whipped light, butter substitute

How To Make low sodium baked chicken

    Preheat oven to 350 degrees. Place 1/3 cup Smart balance butter in oven temp. bowl and place in oven. Wash drumsticks, drain, then in square, metal, non stick bake pan, arrange drumsticks together. Wash and dry hands for mixing of dry seasoning.

    Mince garlic and onions, place aside. With tablespoon or brush, lightly brush melted butter on chicken, then pour honey over drumsticks. Sprinkle the onion and garlic mixture over honey- covered drumsticks.(honey holds onion/garlic on drumsticks while cooking.) Lightly sprinkle with Mrs. Dash Cook and serve with fresh boiled corn cob, candied yams and even a slice of fresh, homemade cornbread

    I believe the chicken prepared this way adds 100 mg. of salt. Fresh and frozen vegetables have zero sodium, so having a slice of cornbread is a nice final touch. Finish with a big bowl of vanilla ice cream.
