I wanted a chicken salad w/out all the mayonnaise, so I came up w/ something a little different!

Ingredients For low-fat chicken pasta salad w/ bbq dressing

3boneless, skinless chicken breasts

1/ 16 oz pkgwhole wheat small pasta shells.

1 cbbq sauce
-
1 clight mayonnaise
-
1 tspground cumin
-
1 cjicama, peeled, diced
-
2red bell peppers, seeded, diced
-
2orange bell peppers, seeded,diced

215.25 oz cans, whole kernel corn, drained.

215 oz cans black beans, rinsed, drained.

1 smjalapeno pepper, chopped.
-
1 smred onion, chopped.

1 cbbq sauce
How To Make low-fat chicken pasta salad w/ bbq dressing

1Place chicken breasts in saucepan over medium-low heat. Pour 1 cup BBQ sauce over chicken, let simmer until no longer pink, about 5-7 min. Cool, dice chicken. Cook pasta as directed, drain, run under cold water. Drain again. In lg bowl, whisk together remaining BBQ sauce w/ mayonnaise until combined. Mix in cumin and diced chicken. Place all other ingredients in bowl and fold gently to combine w/ dressing. Serve warm, or chilled.
