During the winter i love to prepare and eat hearty soups and stews. This recipe I found on another web site for those who live the low carb lifestyle. It's very easy to make and can be changed to suit your preferences and taste. And it's soooooo good!

Ingredients For low carb meat soup

  • 28 oz
    diced canned tomatoes
  • 28 oz
    chicken broth
  • 2 Tbsp
    butter or margerine
  • 1/2
    large green pepper, chopped
  • 1
    large onion, chopped
  • 2
    stalks of celery, chopped
  • 1 lb
    ground beef, browned and drained
  • 12 oz
    smoked sausage (beef, pork, turkey-your choice)
  • 2
    large boneless chicken breasts or 4 boneless chicken thighs
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 tsp
    garlic powder
  • 1/2 tsp
    tony chachere's creole seasoning (or more if you like it spicer)

How To Make low carb meat soup

    Place the diced tomatoes into a large soup pot. Use the tomato can to measure the chicken broth and pour the broth into the pot with the tomatoes. Bring to a boil then lower heat to a simmer. Saute the green pepper, onion and celery in the butter until just tender. Add to the soup. Add salt, pepper, garlic powder and Tony's seasoning to soup. The more of the Tony's seasoning you add the spicier the soup will be. Brown the ground beef and drain. Add to soup. Slice the smoked sausage into 1/2 inch pieces. Heat the sausage in a pan then add to soup. Cut chicken into bite size pieces using a little oil to brown. Add chicken to soup. Simmer soup for at least 15 minutes to let the flavors blend together. This soup is even better the next day!

    The beauty of this soup is that you can use any leftover meat you might have. You can add additional vegetables (low carb ones, that is)but remember the more vegetables the higher the carbs. I have also added some "noodles" I found on the market that are made of tofu. There's only 15 carbs for the entire bag! They are called Shirataki Tofu noodles and they taste just like pasta, believe it or not. Just rinse the noodles well and let drain before adding.
