I loved the chicken salad served at a local restaurant and decided I would try to replicate the taste at home. This recipe is easily adjusted to the number of chicken breast you want to prepare. I have found that a chicken breast makes two servings. It sounds too simple to be so delicious but it was the hit of our last group meeting at church.

1skinless chicken breast, cooked and shredded

2 Tbspcelery (chopped very small)

2 Tbsppecans (chopped very small)

1 tspsugar

2 to 2 1/2 Tbspmiracle whip salad dressing (adjust to your liking)
How To Make light & simple chicken salad for one

1Cook skinless chicken breast in chicken broth. I use a slow cooker. Allow chicken to cool. Shred chicken breast, but not into pieces too small.

2Add other ingredients and mix. If the chicken breast are very large, you may need to adjust the amount of each ingredient accordingly.
