I learned this trick from my dad. Cooking a chicken sitting atop a bundt pan looks funny but cooks up moist, especially w/ the lemon and the herb rub.

Ingredients For lemony, herb-rubbed bundt pan chicken

  • 1/4 c
    olive oil
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1 tsp
    paprika
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 3
    sprigs of rosemary
  • 1
    4 lb whole chicken, washed, patted dry.
  • 1/4 c
    chicken broth
  • 2 lg
    lemons, quartered

How To Make lemony, herb-rubbed bundt pan chicken

    Heat oven to 350. Place a bundt pan on a rimmed baking sheet. In small bowl, whisk together oil, onion powder, garlic powder, paprika. salt, pepper and rosemary.

    Slide tail end of chicken over tube of bundt pan. Pour broth into bottom of bundt pan. Squeeze each lemon into broth. Place lemons around chicken. Bake 1 hr or until juices run clear.
