lemony chicken salad

We love eating this in the spring and summer...sometimes right out of the bowl. Great on croissants, pita bread or as a tortilla wrap. For some reason I'm craving this right now so I thought I would post it.

Ingredients For lemony chicken salad

  • 1/4 c
    mayonnaise, fat-free
  • 1/4 c
    sour cream, lite
  • 1 tsp
    lemon peel, grated
  • 1 tsp
    lemon juice, fresh
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1 lb
    cooked chicken, chopped
  • 1/2 c
    celery, sliced thinly
  • 1/4 c
    green onion, sliced thinly
  • 1/4 c
    slivered almonds, toasted

How To Make lemony chicken salad

    In large bowl, combine mayonnaise, sour cream, lemon peel, lemon juice, salt and pepper. Add chicken, celery, green onions and almonds; mix well. Refrigerate for about one hour to allow flavors to blend.

    Eat it right out of the bowl or serve on bread, croissants, pita pockets or tortillas. Great on a really hot summer day or when you are on the go.
