lemon chicken and rice in one skillet

The original recipe came from the side of a chicken broth can. I didnt like some of the ingredients so i modified it. It is a great one dish meal. I fix boxed augratin potatoes as a side. I jack my box potatoes up by adding frozen chopped broccoli and cooked bacon.

Ingredients For lemon chicken and rice in one skillet

  • 1 pkg
    boneless chicken strips
  • 2-3 clove
    garlic
  • 1
    onion chopped
  • 3 Tbsp
    butter melted
  • 1-2 c
    rice, instant and uncooked
  • 1 c
    shredded carrots
  • 1-2 Tbsp
    parsley flakes
  • 1-2 can
    chicken broth
  • 2-3 Tbsp
    lemon juice concentrate
  • 1-2 tsp
    lemon peel
  • 1-2 Tbsp
    cornstarch

How To Make lemon chicken and rice in one skillet

    Cut boneless chicken strips in chunks. Put butter in large skillet to melt . Add chopped garlic, onion. Cook till chicken is done. Add the corstarch. Cook till blended. Pour in the cans of chicken broth. Stir . Add the lemon juice, lemon peel, carrots and parsely flakes. Cook till carrots are tender. Add the rice. Cook another 5-6 minutes until rice is cooked.

    As an option you can also add chopped or sliced green pepper or red, yellow or orange pepper. You could probably add broccoli too.
