Ingredients For lemon and basil chicken veggie kebabs

1/3 colive oil, extra virgin

3 Tbsplemon juice

1 Tbsplemon zest, grated

2 clovegarlic minced

1 Tbspdijon mustard
-
1 1/2 tspsalt
-
3/4 tsppepper
-
1/3 cfresh basil
-
1 1/2 lbchicken breasts, boneless and skinless cut in 1 inch cubes

1yellow or orange bell peppercut into 1 inch pieces

2 smzucchini cut in 1/2 inch thick slices
-
16 smcherry tomatoes
- 8 (12 INCH) BAMBOO SKEWERS
How To Make lemon and basil chicken veggie kebabs

1Combine oil, lemon juice, lemon zest, garlic, mustard, salt, pepper, and basil in a large bowl. Stir in chicken, bell pepper, zucchini, and tomatoes. Cover and refrigerate 2 hours.

2After chicken and veggies have been marinating for 1.5 hours, soak skewersin water for 30 mins.

3Prepare grill for high heat cooking or heat grill pan until very hot.

4Thread chicken and veggies onto skewers. Grill turning occasionally, until chicken is nicely marked and cook through, about 10 minutes.
