I call this lazy because I used chicken gravy in the jar, purchased pie crust, canned potatoes, and frozen veggies. Even the garlic was from a jar, no chop. I did chop some onion and some celery and that was the extent of effort. The individual casserole dishes that I use are rather deep, they hold 2 1/2 cups. You can put in a layer of leftover dressing in the bottom of the pies if you like, that is yummy too.

1/2 conions, chopped

1/3 ccelery, chopped

1 tspminced garlic from jar

3 ccooked chicken, diced

2 cfrozen veggies in combination you like. i used 1/2 cup each corn, mixed,peas,limas

15 ozcan whole potatoes

24 oz2 12 ounce jars chicken gravy

1/2 tspeach salt, pepper, thyme, dry parsley

1 cchicken stock, optional if it is too thick
-
4 cleftover dressing, optional enough to cover bottom

15 ozpackage of 2 pie crusts, ready to bake, rolled.
How To Make lazy girls chicken pot pie with dressing optional

1Pre heat oven to 400°

2Dice the canned potatoes, onions and celery. If you use garlic from a jar, no messing with that. If you have to use fresh, peel and mince 1 clove of garlic.

3Heat butter in a large saucier and saute the onion and celery until onion is translucent and celery softened, add the garlic and cook a minute more.

4While that is cooking mix together in a bowl the chicken, potatoes, all veggies, gravy, seasonings.

5Add veggies and chicken to sauteed onion mixture and bring everything to a nice hot bubbly temperature. If you think it is a little thick, thin with some chicken stock.

6Cut pie crust to fit your pie pans, with a little overlapping.

7If you want to use dressing, divide it between the casserole dishes, and pack to compact a little.

8Divide chicken filling evenly between 4 to 6 pie pans, cover with crust, seal edges. Mske 3 slits in the top middle of crust to vent.

9Bake for 30 to 40 minutes or until crust is golden and filling bubbly.
