Ingredients For lammas / lughnasadh chicken

2large chicken breasts, skinnless and boneless

1 clovegarlic, minced

1bay leaf

1 Tbspthyme

3 Tbspolive oil

5-6mushroom, sliced

2 cwild rice, uncooked

1 1/2 cv8 or tomato juice

2 1/2 cwater
-
1 lgonion, chopped
-
1/4 tspfreshly ground black pepper

1 mdgreen pepper, diced
How To Make lammas / lughnasadh chicken

1Cut chicken into large chunks. Saute 5 minutes in olive oil. Add onion, garlic, green pepper and mushrooms. Cook until onions are transparent.

2Add remaining ingredients, stir and put in a oven safe pot. Cover and bake 350 degrees for30 -45 minutes or until the liquid is absorbed and chicken is done.
