This is one of my husband's favorite dishes,mine too actually. I like to serve it with some type of pasta. I sometimes use sliced Mozzarella cheese instead of Parm,and that's delicious too. Please,please do not use pre-grated Parmesan cheese,it makes such a difference when you use a block of Parm and freshly grate it.

Ingredients For lad's chicken parmagiana

4 boneless, skinless chicken breasts, pounded flat

1/2 c flour

salt and pepper,to taste

1 teaspoon garlic powder

2 eggs
-
2 c seasoned breadcrumbs

1/4 c olive or canola oil
-
2 tablespoons butter
-
1 onion,minced
-
4 cloves garlic,minced
-
1/2c white wine
-
4 cups crushed tomatoes
-
1/4 c fresh parsley
-
1 tablespoon fresh basil
-
1 c parmesan cheese,freshly grated
How To Make lad's chicken parmagiana

1Mix flour, salt,pepper and garlic powder together on a large plate. Beat egg well,season with salt and pepper,place in another large plate. Place breadcrumbs on another large plate. Season chicken with salt,pepper and garlic powder. Dredge chicken in flour mixture,then in egg mixture,then in breadcrumbs pressing the crumbs into the chicken well. Set aside. Heat olive oil and butter together in a large skillet over medium heat. cook chicken breasts until golden brown on each side, about 3 minutes on each side. Remove chicken from the skillet and cover to keep warm to the same skillet, add onions and garlic and cook for 2 minutes. Pour in wine and scrape the bottom of the pan, boil wine to cook until reduced by half. Pour in tomatoes and stir. Add salt and pepper to taste. Cook for 30 minutes. Add parsley and basil,stir well. Lay chicken on top of the sauce and cover them with cheese. Place lid on skillet and reduce heat to low. Allow to simmer until cheese is melted and chicken is thoroughly heated.
