Ingredients For kung poa chicken drums with ginger honey & nuts

  • 1/2 c
    honey
  • 1 inch
    piece ginger, shredded
  • 1 sm
    shallot, chopped
  • 2 clove
    garlic, minced
  • 2 tsp
    rice vinegar
  • 1 tsp
    mirin
  • 3 Tbsp
    hoisin sauce
  • 1/2 tsp
    sambal olek (or more if you like really spicy)
  • 6
    chicken drumsticks
  • salt and pepper
  • 4 c
    canola oil, for deep frying
  • 3
    scallions, chopped
  • 1/4 c
    toasted nuts, crushed

How To Make kung poa chicken drums with ginger honey & nuts

    In a saucepan, add the honey, ginger, shallot, garlic, rice vinegar, mirin, hoisin sauce and sambal. Cook about 5 minutes. Set aside.

    Season the chicken with salt and pepper. Bring the oil to 350 degrees F. Working with 3 drums at a time, deep fry for about 10 to 15 minutes, depending on the size of the legs.

    Pour the sauce over the thighs. Mix the scallions with the peanuts and top the chicken drums.
