I love all kinds of ethnic foods, and Filipino food ranks high up there with me!.....I've been making chicken adobo for years (can also make adobo using pork,or a combination of *any* meats the combination of pork and chicken together is ideal!).....I have been posting mainly quick and easy recipes, but this one is for Jo Anne!...(smile!)I hope those of you who haven't tried adobo will try this...you won't be disappointed! my measurements are approximate, because I've been making this so long, I don't follow a recipe for it!....but I think the measurements will be ok!.....K. :)

Ingredients For kay's filipino chicken adobo (my way!)

  • 3 1/2 lb
    cut up chicken (extra dark pieces added)
  • 1 sm
    onion (chopped)
  • 6 clove
    fresh garlic (smashed)
  • 1/2 c
    apple cider vinegar (for sweet/sour taste)
  • 1/3 c
    soy sauce
  • 3-4
    bay leaves, dried
  • 4 Tbsp
    paprika
  • 3 slice
    peeled fresh ginger
  • 1 Tbsp
    sugar
  • a bit of water (maybe 1/4 to 1/2 cup)
  • salt and pepper to taste
  • and i use a tablespoon of accent...but you can leave it out if msg scares you! (smile!)
  • legs and thighs work well with this dish, but i use whole chicken, and add extra legs /thighs

How To Make kay's filipino chicken adobo (my way!)

    You will like this part!.......wash chicken, and throw everything in one pot (no need to pre-cook or brown anything)....(make sure skin and bones are still on the chicken (don't try to make this with boneless chicken breasts...it won't work!)...If you want, you can remove *SOME* of the skin, but leave enough to make the adobo!....Bring to a boil, then turn down to simmer for about an hour (slow cooking is best for this dish!)......Hope you enjoy this.....The juice is so yummy over white rice!.......K. :)
