1In a wok or large skillet place the oil. Add the chicken and saute until opaque. Add the onions, mushrooms, ginger, and garlic. Stir fry until chicken is almost done and the mushrooms are browned

2Stir in the soy sauce, fish sauce, rice vinegar, and brown sugar. Stir fry 3 more minutes. Serve sprinkled with scallions
