2 lbbeef or chicken strips

2 tspgarlic

1 tspcumin

1 Tbspsoy sauce

2 Tbspred wine vinegar

salt, pepper

3red onion wedges

1red chile strips, seedless

2 ctomato wedges, seedless

2 tspparsley flakes

fried french fries ( 1 cup per serving)
How To Make jumpin' beef (lomo saltado)

1In large frying pan heat oil, fry beef or chicken, add garlic, cumin, soy sauce,vinegar, salt and pepper.

2Add onion and chile, mix until cooked but still crisp.

3Add tomato wedges, mix and turn off heat. Leave covered for 5 minutes.

4Sprinkle parsley and serve with french fries.
