This dish is common across West Africa. It is very spicy!! I found this recipe in an old issue of "Chile Pepper."

Ingredients For jolof rice

1 lbcut-up chicken or 1 lb. beef stew meat

4 cwater

2 ccooking oil

3chopped onions
-
16 ozcan of tomato sauce

2 Tbspground red pepper

1 tspsalt

1/2 tspground black pepper

2 cbrown or white rice
How To Make jolof rice

1Deep fry the chicken or beef until brown.

2When finished, remove the meat or chicken and leave about 1 cup of oil in the pan; fry the chopped onions in it.

3When the onions are browned, add the tomato sauce, cooked chicken or beef and 2 cups of water and simmer.

4Then add the 2 cups of rice and 2 more cups of water, mixing thoroughly.

5Cover and simmer slowely until the rice is done, about 20 to 30 minutes.
