This recipe is by the wonderful chef and cookbook author, Joan Nathan. I have nothing but praise for all of her recipes I've tried. This one is one of my husband's favorites and deserving of a special occasion!

Ingredients For joan's honey orange chicken

2eggs

2 tspwater

1 cbread crumbs or matzo meal

1 tspsalt

1 1/4 Tbsppepper

1 1/23 pound fryers, cut up

1/2 cvegetable oil for browning chicken

1 chot water
-
1 corange juice
-
1/4 tspground ginger
-
1/4 to 1/2 choney (i find 1/4 cup to be enough.)
How To Make joan's honey orange chicken

1Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture. Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan.

2Heat the oven to 325 F. Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger.

3Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
