Ingredients For jerk chicken - cassies way

13 pound chicken, cut into pieces. i used 4 thighs/ 3 breasts cut up

2 tspsalt

2 tspground allspice

2 tsppacked brown sugar

2 tsponion powder
-
1 tspdried minced garlic - was out so used 3 minced cloves fresh

1 tspground nutmeg
-
1 tspblack pepper
-
1 tspdried onion flakes ( optional )

1 tspground ginger
-
1/2 tspcayenne - i used more
-
2dried habaneros/ crushed - optional
-
1/2 tspground cinnamon
-
1/2 tspdried thyme
-
1/2 tspred pepper flakes - i used more

1/4 cvegetable oil
How To Make jerk chicken - cassies way

1Make the jerk rub by mixing all the spices.

2Toss the chicken pieces with the spice mixture, then cover, and marinate in the refrigerator 2 to 4 hours.

3Preheat oven to 350 degrees F. Pour the vegetable oil into a 9x13 inch baking dish.

4Place the chicken pieces skin side up into the baking dish.

5Bake in the preheated oven for 1 hour 20 minutes, until no longer pink near the bone.

6Turn the oven on to broil, and cook until the skin crisps, 2 to 5 minutes. ( I used skinless breasts, so I took the thighs with skin and placed on top).
