This is a super simple recipe with few ingredients but the combination of flavors is delish. I do choose to add my jam by dropping small spoonfuls in between the chicken because I want bursts of apricot flavor vs. spreading it on the bread. There is nothing better than the sweetness of the fruit jam mixed with the creamy smoked gouda melted over the chicken. It is savory bites of deliciousness. I hope you'll give it a try. I have been trying to create some new grilled sammies and this is one of them.

Ingredients For jammin' chicken panini

  • 4 - 6 oz
    rotisserie chicken, deboned
  • 1 1/2 Tbsp
    dijon mustard
  • 1 - 2 Tbsp
    apricot jam or marmalade
  • 2 slice
    italian bread
  • 1 - 2 Tbsp
    cranberries, dried
  • 1 - 2 oz
    dofino smoked gouda cheese
  • butter

How To Make jammin' chicken panini

    Panini grill or any other kind of grill will work
  • 2
    Butter your bread on outside for grilling. On the other side of 1 slice spread the dijon. Add your chicken, sprinkle the cranberries on top of chicken. Then I drop the apricot jam down inside the pieces of chicken just a little here and there. Add your slices of gouda and the other slice of bread and your ready to grill.
