Ingredients For jambalaya

1/2 colive oil

3 cchopped onions

2 Tbspminced shallots

1 Tbspminced garlic

1 cchopped green bell pepper

3 tspsalt, in all

1 lbadouille sausage, cut in 1/4 inch slices

1 1/2 lbwhite and dark chicken meat, cut into 1" cubes

1 1/4 tspcayenne pepper
-
3 clong grain rice
-
6 cwater, or chicken broth (i use broth)

3bay leaves
How To Make jambalaya

1Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.

2Add the sausage and continue browning, cooking about 15 minutes.

3Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.

4Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
