These Italian chicken packages are an easy one-pan summer dinner. Inside a foil package, olive oil adds a richness to the juicy and tender chicken breast. The zucchini and tomatoes are cooked in the foil and infuse their flavor into the chicken. Basil adds a fresh, slightly sweet taste to the meal. Mozzarella cheese becomes nice and melted over the chicken and the vegetables to make this dish even better! Terrific flavor and a wonderful presentation.

Ingredients For italian chicken packages

  • 6 tsp
    extra virgin olive oil
  • 6
    chicken breasts, boneless and skinless
  • 3 c
    sliced zucchini
  • 6
    tomatoes, sliced
  • 3 tsp
    salt, divided
  • 3/4 Tbsp
    black pepper, divided
  • 2 c
    sliced mozzarella cheese
  • 1/2 c
    chopped fresh basil

How To Make italian chicken packages

  • Brush olive oil on a piece of aluminum foil.

    Preheat the oven to 400 degrees F. Cut six pieces of foil large enough for one chicken breast and vegetables. Brush foil with about 1 tsp of olive oil. Set aside.
  • Cut slits into the chicken breasts.

    With a sharp knife, cut slits into the chicken breasts.
  • Place chicken on the oiled foil.

  • Divide vegetables evenly on the foil.

  • Sprinkle salt and pepper.

    Sprinkle 1/2 tsp of salt and 1/4 tsp of pepper on each chicken breast.

  • Chop the basil.

  • Wrap foil packets and place onto a baking sheet.

    Close the foil packets. Place on a cookie sheet.
  • Bake packets until cooked. When serving, unwrap the package.

    Bake in the preheated oven for 30 - 45 minutes depending on the size of the chicken breasts.
