This is a recipe that I just tried and it was not only simple, but fast, and really tasty.

Ingredients For italian chicken casserole

  • 2 md
    eggs
  • 1 c
    italian bread crumbs
  • 1 c
    chicken broth
  • 1/4 c
    white wine (optional)
  • 1 c
    muenster cheese (grated)
  • 1 md
    sweet onion
  • 1 md
    pack of mushrooms
  • 3-4 md
    boneless skinless chicken breast (cubed)

How To Make italian chicken casserole

    Saute' sweet onion and mushrooms. I usually do them separate, then add them together when they are done.

    Prepare extra wide egg noodles, or pasta of choice, drain, and set aside.

    Whisk eggs in bowl. Place cubed chicken in eggs until ready for breading.

    In large frying pan, coat with non-stick spray, butter or EVOO, whatever your personal favorite is. Take cubed chicken out of egg mixture and drop into bread crumbs. Brown on each side, then set aside.

    In 9 X 13 casserole dish, place pasta, mushrooms, onions, chicken, and add chicken broth (and/or wine). Grate Muenster cheese over top. Bake @ 350 for 1/2 hour. There are so many variations to this recipe, it is one that would be very easy to have a lot of fun with.
