italian chicken and potatoes

I found a similar recipe for this dish in an Sunday magazine from a newspaper in Boston , but it only called for rosemary. I changed it and added the oil, garlic powder and spices and voila, had a delicious dish. Cook this at 375 degrees.

Ingredients For italian chicken and potatoes

  • 1
    7-8 lb roasting chicken
  • 1 c
    milk
  • margarine
  • garlic powder
  • 6-7
    potatoes, peeled and sliced thinly
  • italian spices
  • olive or vegetable oil

How To Make italian chicken and potatoes

    Get a 9x12 glass baking dish and put margarine all around the inside of the dish. Cook the thin sliced potatoes on the stove with the milk until they are almost cooked. Drain, then layer potatoes in the dish, sprinkling garlic power and Italian spices on each, to taste. Then take the chicken, remove giblets and place on top of the potatoes, season with oil, garlic powder and Italian spices. Put it in the oven and bake until the chicken is completely cooked. Remove the chicken from the potatoes when it is done and put the potatoes back in the oven to brown. When done, serve. And enjoy!
