Ingredients For island chicken

1 cflour

2 tspsalt

2(2-3 pound)fryers, cut, up to 8 legs

1/2 coil

1green pepper, cut up

2onions, sliced

1 cwater

2 Tbspvinegar

1 can(20 ounces) sliced pineapple, drained (reserve juice)

3 Tbspcornstarch

1/2 csliced almonds
How To Make island chicken

1Mix flour and salt. Coat chicken. Brown chicken on all sides in oil over medium heat. Remove to roasting pan. Bake in 350 degree oven for 20 minutes.

2Saute pepper and onions in remaining oil in skillet about 2 minutes. Add water and vinegar. Cut sliced pineapple into quarters.

3Mix cornstarch and 1/2 cup reserved juice; stir into vegetable mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil and boil 1 minute.

4Stir in pineapple. Pour over chicken. Sprinkle with almonds. Continue baking about 20 minutes or until chicken is tender.
