In honor of St. Patrick's Day, my sandwich group Sandwiches, Sammiches & Sammies challenge was to create a sammie using the Irish flag colors green, white & orange. This was such a fun sammich to make and it was most delish! Happy Sammie Making, sw:)

Ingredients For irish flag sammich
-
4 mdchicken breast halves, skinless and boneless
-
1 cbroccoli florets
-
1 ccauliflower, florets
-
4 ozshredded italian cheese
-
1/4 cmayonnaise
-
1/4 ctomato bacon dressing
-
2 Tbspcapers
-
1/2 cwhite wine
-
1 1/2 cchicken broth-enough to cover chicken breast
-
1 lgbay leaf
-
1/4 colive oil, extra virgin-divided
-
1-2 tspgreek seasoning
-
4hawaiian buns
-
red & yellow food coloring-makes orange
How To Make irish flag sammich

1gather all your ingredients. combine mayonnaise, tomato bacon dressing and capers in a bowl
-
2add a couple drops of red and yellow food coloring to 2 tbsp of evoo. brush the tops of buns and broil in oven for a couple of minutes

3meanhile, add chicken and bay leaf to a pot...single layer snug. cover chicken with wine and broth. bring to a boil and reduce to a simmer. simmer for 8-10 minutes. turn off heat and let chicken remain in the hot bath for 15 minutes or so

4deep fry broccoli and cauliflower at 350 degrees for 5-7 minutes or until the veggies are turning goldes brown. remove and drain oil

5add remaining evoo and greek seasoning to a bowl. toss broccoli and cauliflower in oil

6melt cheese on chicken breast under broiler..spread dressing on all bun halves...followed by chicken cauliflower & broccoli and top of bun...enjoy!
