Delicious & easy. People lick their plates with this one. This is best when chicken is defrosted beforehand. It may be fine to use frozen chicken, if you adjust the cooking time accordingly. I have not tested this recipe for frozen chicken. Frontier Coop’s lemon flavoring is just lemon oil in a sunflower oil base. It’s delicious in a lot of things. I use it here in place of lemon zest, since I have kidney stone issues & citrus zest is forbidden for me. I let others sprinkle lemon zest on their servings. You may skip the lemon flavoring & just use lemon zest.

Ingredients For ip lemon chicken, scd compliant

  • about 3 Tbsp
    light flavored olive oil or cooking oil
  • about 3.5 lb
    boneless, skinless chicken thighs (3 costco packages)
  • salt (about 2 tsp.) and black pepper (about 1 tsp.), to preference
  • 3 Tbsp
    italian seasoning, or mix of basil, oregano, marjoram, thyme & rosemarry
  • 2 1/4 tsp
    granulated garlic (penzeys & mccormick brands are scd friendly last i checked)
  • 2 tsp
    smoked paprika (penzeys & mccormick brands are scd friendly, last i checked)
  • AFTER BROWNING, ADD:
  • 1-2
    onions, diced
  • 7 Tbsp
    lemon juice (or juice from 3 lemons, zest reserved for sprinkling on top)
  • 1 tsp
    frontier coop lemon flavoring (optional, may use zest from the lemons instead)
  • 1/3 c
    water or homemade chicken broth
  • AFTER PRESSURE COOKING 7 MIN., STIR IN:
  • 6 Tbsp
    dripped scd yogurt, made with half & half, (cream cheese, heavy cream, or coconut cream may be substituted, but cream cheese and heavy cream are not scd compliant)
  • TO SERVE, OPTIONS TO SPRINKLE ON TOP:
  • lemon zest
  • fresh herbs such as parsley, basil, or lemon thyme
  • more freshly ground black pepper

How To Make ip lemon chicken, scd compliant

    Pour light olive oil into Instant Pot, then top with chicken. Sprinkle chicken with seasonings. Press “Sauté” button, and cook on sauté mode without stirring, until the chicken has nicely browned on the bottom. Stir, and cook a bit more to brown as many sides of the chicken as you can. Add the onion & cook a bit longer. Press cancel.

    Add the lemon juice, lemon flavoring (or lemon zest), and water or chicken broth. Pressure cook on high for 7 minutes. Let it natural pressure release for 2 minutes, then manually release the pressure.

    Stir in the SCD dripped yogurt made with half & half. Serve and sprinkle any additional garnishes on top. Goes well with a side of steamed broccoli.
