1 boxsliced baby bella mushrooms

3 tspchopped jarred garlic

1 lgsweet onion chopped

4 Tbspbutter

4 cchicken broth

1 1/2 Tbsplemon juice

1 1/2 cjasmine rice

1 cshredded parmesan cheese

1Add salt and pepper to the cut-up chicken and mix to coat it well.

2Turn your Instapot to sauté. Add two tablespoons of butter and allow it to melt. Add the chicken and mushrooms and sauté and stir occasionally until the chicken is slightly brown, about eight minutes.

3Add another two tablespoons of butter to the Instapot. Add the onions and garlic. Sauté for four minutes stirring frequently.

4Add the broth, lemon juice and jasmine rice to the Instapot. Stir well.

5Set the Instapot to pressure cook for eight minutes. When finished, let it release naturally for two minutes. Then quick release.

6Remove the lid and stir in the parmesan cheese. Add more salt and pepper as necessary to taste.
