8chicken thighs

1/3 csoy sauce

1/4 ceach sugar and white vinegar

5 clovegarlic minced

2bay leaves

1 mdyellow onion diced

scallions and rice for serving
How To Make instant pot chicken adobo

1Season the chicken with salt and pepper. Add oil to instant pot. Select saute and brown the chicken on both sides. Work in batches of 4.

2Add the chicken back to the instant pot and add the soy sauce, sugar, vinegar, garlic, bay leaves, and onion.

3Place the lid and select pressure cook on high for 10 minutes. Use quick release. Select saute again and bring to a boil and let sauce reduce to a dark brown color about 20 minutes. Set the chicken aside. Strain the sauce discarding the solids.

4Top the rice with chicken thigh and ladle sauce over and garnish with scallions.
