Ingredients For honolulu chicken

1/4 cup flour
-
1/4 tsp. salt
-
dash black pepper
-
1 broiler chicken, cut up
-
oil
-
1 jar peach preserves
-
1/2 cup barbecue sauce

1/2 cup chopped onion
-
2 tbsp. soy sauce
-
1 large can water chestnuts, drained and sliced
-
1 green pepper, cut into strips
-
hot cooked rice
How To Make honolulu chicken

1In large bowl, mix flour, salt and pepper. Coat the chicken with the seasoned flour. In large skillet, brown the chicken in a small amount of oil. Drain.

2In another bowl, mix the preserves, barbecue sauce, onion and soy sauce and pour mixture over the chicken. Cover and simmer for 40 minutes or til chicken is tender

3Add water chestnuts and green pepper during last 10 minutes of cooking. Serve with rice.
