I absolutely love honey mustard! Just so happens so does my youngest daughter! Not only is it delicious, but it's also healthy. My youngest is on a health kick, I wonder where she gets it from! haha. She asked for this delicious chicken today. And beings as she usually gets what she wants, I made it. This can be made in a skillet, cast iron grill, or on the grill. I prepared in my cast iron grill. With my homemade honey mustard sauce, it's so tender and juicy! Served up with a side of my husband's delicious asparagus. Also goes well on a nice salad. Quick & easy too. Hope you enjoy!

Chicken breasts are always popular and this is a fantastic way to jazz them up. The chicken is seasoned simply with salt and pepper. When grilled, it's juicy. Brushing the chicken with the homemade honey mustard amps the flavor. The sauce is sweet, tangy, slightly acidic, and quite tasty. You could even use this as a salad dressing. Don't brush all the sauce on the chicken when grilling. Keep some of the sauce for dipping.

Ingredients For honey mustard chicken

  • HONEY MUSTARD SAUCE
  • 1/2 c
    honey
  • 1/2 c
    Dijon mustard
  • 2 Tbsp
    light mayonnaise
  • 1 Tbsp
    lemon juice
  • 2 Tbsp
    apple cider vinegar
  • 2 clove
    garlic, finely minced
  • 1 Tbsp
    low-fat butter
  • CHICKEN PREP
  • 4
    boneless, skinless chicken breasts
  • 2 tsp
    salt
  • 1 1/2 tsp
    fresh cracked pepper

How To Make honey mustard chicken

  • Honey, Dijon mustard, mayonnaise, lemon juice, apple cider vinegar, garlic, and butter in saucepan.

    In a small saucepan, add honey, Dijon mustard, light mayonnaise, lemon juice, apple cider vinegar, minced garlic, and low-fat butter. Cook on low heat until honey is cooked into the ingredients (about 5 minutes). The sauce will be thick.
  • Removing sauce from the heat.

    Remove from heat and set aside. Yields approximately 1 cup.
  • Seasoning and tenderizing chicken breasts.

    If you have a cast iron grill skillet, brush with olive oil and heat over medium-high heat. Prepare chicken by tenderizing. Season with sea salt and fresh cracked pepper (to taste).
  • Grilling the chicken breasts.

    Cook chicken for about 5 minutes on each side or until chicken is no longer pink inside. Cook time will vary depending on the thickness of the chicken breasts.
  • Brushing chicken breasts with honey mustard.

    Brush honey mustard sauce over chicken on each side and cook for about 2 minutes on each side.
  • A platter of Honey Mustard Chicken.

    Serve with a side of asparagus. Or, cut in slices and serve over cold salad. Use extra sauce for dipping or dressing!
