This is my mothers recipe. She has diabeties and tries to have healthy recipes that are also tasty on hand at all times. I liked this one a lot, so figured I'd share it. Calories: 363 Fat: 4.3 grams Carbs: 47.5 grams.

Ingredients For healthy ziti and chicken

1 lbwhole wheat ziti pasta.
-
12 ozcooked, chopped chicken breasts
-
2 tspbutter
-
1chopped onion
-
1 Tbspdijon mustard
-
2 Tbspwhole wheat flour
-
2 creduced-sodium chicken broth
-
1/4 clemon juice
-
110 oz pkg frozen peas & carrots, thawed
-
1/4 cfresh, chopped parsley.

1/8 tspsalt and pepper to taste.
How To Make healthy ziti and chicken

1Cook pasta as direcetd, drain, keep warm. In lg skillet, warm butter over medium heat. Add onion. Cook until tender. Stir in mustard and flour. Gradually whisk in broth. Bring to a boil. Stir in lemon juice, peas and carrots, and parlsey. Toss pasta w/ chicken and sauce. heat hrough. season w/ salt & pepper.
