To save time you can use a store-bought rotisserie chicken though this is also a fantastic way to use up leftover turkey. A healthy and hearty weeknight dinner! Culinary argan oil (not to be confused with skincare grade) adds a rich nutty flavor (you can also use toasted sesame oil). Low cal and high protein!

1rotisserie chicken, deboned

3 Tbspargan oil

1/2 cminced green onions

1In a large, heavy pot bring broth, soy sauce and wine to a boil. Reduce heat to medium low and stir in chicken and quinoa. Cover and simmer 10 minutes.

2Stir in peas and simmer until heated through, about 2 minutes.

3Season to taste with salt and pepper. Drizzle with oil and sprinkle onions in top.
