healthy (and yummy) chicken and peas quinoa

To save time you can use a store-bought rotisserie chicken though this is also a fantastic way to use up leftover turkey. A healthy and hearty weeknight dinner! Culinary argan oil (not to be confused with skincare grade) adds a rich nutty flavor (you can also use toasted sesame oil). Low cal and high protein!

Ingredients For healthy (and yummy) chicken and peas quinoa

  • 28 oz
    broth
  • 1 1/2 Tbsp
    soy sauce
  • 1 Tbsp
    white wine
  • 3 1/2 c
    cooked quinoa
  • 1
    rotisserie chicken, deboned
  • 1 1/2 c
    peas
  • To taste
    salt and pepper
  • 3 Tbsp
    argan oil
  • 1/2 c
    minced green onions

How To Make healthy (and yummy) chicken and peas quinoa

    In a large, heavy pot bring broth, soy sauce and wine to a boil. Reduce heat to medium low and stir in chicken and quinoa. Cover and simmer 10 minutes.

    Stir in peas and simmer until heated through, about 2 minutes.

    Season to taste with salt and pepper. Drizzle with oil and sprinkle onions in top.
