This makes a large recipe. It was given to me by my sister-in-law (was originally my mother-in-laws) recipe. It is very good - I usually divide it in half for just us. Makes a great dish for company.

Ingredients For hawaiin chicken

    cut up fryers (chicken)
  • 1 lg
    can of pineapple chunks(drained, reserve the juice)
  • 1 bunch
    green onion (chopped)
  • 1/2 tsp
    ginger
  • 1
    green bell peppers (sliced or julienned)

How To Make hawaiin chicken

    Arrange the chicken in a baking dish and top with pineapple and peppers. Sprinkle with 1/2 tsp. ginger. Pour sauce (recipe follows) over the top and bake at 350 degrees for 1 hour. Top with green onions.

    SAUCE: 1 cup pineapple juice, 1/2 cup wine vinegar (I use white), 1/2 cup brown sugar, 2 Tbs. corn starch, 2 Tbs. soy sauce ( I use dark ) and a pinch of salt. Combine the ingredients and bring to a boil, stirring until thickened and clear. Pour over the chicken and bake as directed.
