This one has clearly been served as dinners to guests as Barb has the makings for 10-12 servings listed as ingredients. I would serve this on rice, use the juice from the pineapple chunks, and personally not add bamboo shoots and mushrooms...

Ingredients For hawaiian chicken, barb

  • 3 c
    cooked, cubed, white meat chicken
  • 1/4 c
    melted butter
  • 4
    white green onions, chopped
  • 1 clove
    crushed garlic
  • 2 Tbsp
    flour
  • 1 tsp
    accent
  • 1 tsp
    salt
  • 1 c
    pineapple juice
  • 1 c
    dry white wine
  • 5 1/2 oz
    sliced waterchestnuts, drained
  • 6
    fresh mushrooms, sliced, sauteed in butter
  • 5-6 oz
    bamboo shoots, drained
  • 1
    1 lb 4 oz can pineapple chunks, drained
  • chopped macadamia nuts, optional
  • dash curry powder, optional
  • dash ginger, optional

How To Make hawaiian chicken, barb

  • 1
    Saute onions and garlic in butter until soft, blend in flour, accent and salt. Add water and pineapple juice, cook to a boil and it thickens. Add chestnuts, mushrooms, bamboo shoots, curry and ginger. Simmer 5 min, add pineapple and chicken. Cook, stirring only if necessary, until heated through. Serve with steamed rice, can add macadamia nuts around the border of the servings. Serves 4, generous servings.
