Ingredients For hainanese style chicken and rice

  • CHICKEN
  • 1
    whole chicken
  • 5 l
    water
  • 3 stalk
    scallions, white and light green parts only
  • ginger, 1 inch slice
  • 6 clove
    garlic, crushed
  • 1/2 Tbsp
    turmeric powder
  • 3 Tbsp
    Kosher salt
  • 1 Tbsp
    sesame oil
  • RICE
  • 2 c
    jasmine rice
  • 3 c
    chicken stock from cooking the chicken
  • GINGER SCALLION OIL
  • 2 Tbsp
    minced ginger
  • 3 stalk
    scallions, chopped
  • 1/2 tsp
    salt
  • 1/2 c
    olive oil
  • CHILI SAUCE
  • 3 lg
    dried thai chilies
  • 1/2 md
    lime, juiced
  • 1 Tbsp
    grated ginger
  • 2 Tbsp
    sugar
  • 4 clove
    garlic, minced
  • 1 tsp
    salt
  • 1/4 c
    hot chicken stock from the cooked chicken

How To Make hainanese style chicken and rice

    Place water in a large pot. Add the salt. Bring to a boil. Rinse the chicken and then holding by the legs, dip the chicken in the boiling water for 5 seconds and then pull it out. Do this two more times to tighten the skin.

    Drop the chicken in the water and add the scallions, garlic, ginger and turmeric powder. Bring the heat to a simmer and simmer 45 minutes.

    Place the rice in a rice cooker and set aside.

    Prepare the sauces. For the ginger garlic, mix the ingredients together in a heat proof dish. Pour the hot oil over top and let it sizzle.

    For the chili sauce, put all the ingredients together in a bowl and add the hot chicken stock right out of the pot. Once the chilies are soft, put through a food processor.

    Once the chicken is cooked, place in an ice bath for 10 minutes. Remove and brush with sesame oil.

    Put 3 cups of the chicken stock through a fine mesh strainer into the rice cooker with the rice. Cook according to the cooker directions.

    Debone the chicken and serve with the rice and sauces.
