This makes for a great meal any time of year. You can put in all shrimp, all chicken or all sausage. We like it best with a little bit of all 3 meats and alot of okra for a very hearty dish.

Ingredients For gumbo

  • 2
    onions, sliced
  • 1
    green pepper, diced
  • 1-2 pkg
    frozen cut okra or 1-2 lbs fresh, stemmed & cut into 1" pieces
  • 2 Tbsp
    butter
  • 3 c
    water
  • 1 tsp
    hot sauce
  • 2 Tbsp
    flour
  • 1 can
    diced tomatoes
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/8 tsp
    garlic powder
  • 1
    bay leaf
  • 1-2 lb
    any combination of the following: shrimp, diced chicken and/or sliced sausage

How To Make gumbo

  • 1
    Saute vegetable in butter until done.

    Add flour & stir until bubbly.
  • 3
    Remove from heat & stir in all ingredients, except shrimp.

    Simmer, uncovered for 45 minutes on low.

    Add shrimp & cook until no longer pink.

    Remove the bay leaf & discard.
  • 7
    Serve over cooked rice.
