Ingredients For grilled greek chicken pasta salad

  • 6
    chicken breast halves, skinless and boneless
  • MARINADE:
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    red wine vinegar
  • 2 Tbsp
    oregano, fresh
  • 2 Tbsp
    parsley flakes
  • 4 clove
    garlic, minced
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • DRESSING:
  • 1 c
    olive oil, extra virgin
  • 1 c
    lemon juice
  • 4 Tbsp
    basil, fresh
  • 3 5.3 oz
    oikos plain greek yogurt
  • 1 Tbsp
    anchovy paste (optional)
  • 8 clove
    garlic, minced
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • OR...
  • 2 bottle
    ceaser dressing
  • SALAD:
  • 1 pkg
    pasta of choice
  • 3 md
    cucumbers
  • 2 pkg
    cherry or grape tomatoes
  • 1 lg
    red onion
  • 2 jar
    kalamata olives, pitted & halved
  • 4 pkg
    feta cheese, crumbled

How To Make grilled greek chicken pasta salad

    Whisk all marinade ingredients in a small bowl. Place chicken in a reasealable plastic bag in a shallow bowl or dish. Pour marinade over chicken. Seal bag; turn to coat chicken. Marinade in frig for 24 hours; turning occasionally.

    IF USING BOTTLED DRESSING; SKIP THIS STEP. In a screw-top jar, combine dressing ingredients. Cover & shake well. (MAKE THIS THE DAY BEFORE USING SO ALL THE FLAVORS MARRY TOGETHER).

    After marinading time is done...cook pasta according to directions. Drain with cold water; drain again.

    Drain chicken, discarding marinade. Place chicken on the rack of an uncovered grill directly over heat. Grill 12-15 minutes or until tender & no longer pink (170 degrees), turning once.

    Cool chicken until cool enough to handle (15-30 minutes). Transfer chicken to a cutting board; cut into bite-size pieces.

    In a very large bowl, toss together the cooked pasta, tomatoes, cucumbers, onion, olives & cut up chicken pieces.

    Drizzle dressing over pasta/chicken mixture; toss to coat.

    Cover & chill in frig for at least 2 hours or longer.

    To serve, add feta cheese; toss. Enjoy!
