I love fajitas tacos and was thinking about what could I put on a spicy smoky chipotle chicken fajita and then it hit me... a cool lime sauce with sour cream, yogurt, a little lime and sugar. Well, it turned out to be a great contrast to the spicy fajita and really did helps cool it down; however, this is a "spicy hot" one. Make sure you got a nice tall glass of drink before you get started. Love all the flavors this taco brings and I was pleased with the sauce that is tangy and sweet.

Ingredients For grilled chipotle chicken fajitas w/cool lime sauce
- MARINADE FOR CHICKEN

1 lbchicken breast, sliced for fajitas

1 corange juice

1/2of a lime juiced

2 Tbspchipotle sauce
- GRILLING CHICKEN

2 Tbspchipotle sauce

1 tspcumin
-
1 tspcorainder

1 tspsalt
- COOL LIME SAUCE
-
3 Tbspsour cream
-
1 smcontainer of vanilla yogurt (6 oz.)

1 mdlime, juice and zest
- CONDIMENTS FOR FAJITA TACOS

1 pkgtortilla shells
-
6 - 8 mdargula, green leaf and/or red leaf lettuce

1 - 2 Tbspcool lime sauce, drizzled on chicken

1/4 ccilantro, chopped

1 lbcrisp bacon
-
1/2 cfresh salsa
-
2 mdlimes, sliced and fresh squeezed
How To Make grilled chipotle chicken fajitas w/cool lime sauce

1Prepare your marinade for chicken and then place chicken in the marinade and cover with a lid; then refrigerate for at least an hour. We usually marinate for 4 to 6 hrs. Cook up 4 - 8 slices of crisp bacon. Set aside.

2Prepare you lime sauce. Mix all the ingredients together.

3Remove your fajitas from refrigerator. Drain and then place chicken in a bowl with the mixed chipotle sauce, cumin, coriander and salt. Coat the chicken as best as possible. Now, grill your chicken. If sliced fairly thin it should only take 6-8 minutes for chicken to be done. (Don't overcook or they will be dry.)

5This is the tortilla shells that I used and they are high in fiber and low carb and still very tasty. Got them at WalMart's.
