I am such a big sandwich fan! I am happy with soup and sandwiches over some other items. I saw a recipe for an onion jam, and then saw an email about strawberry season. I thought awesome it would be to incorporate this delicious berry into this jam. It would also taste great on a grilled pork tenderloin or pork chops, too. This would be an awesome tailgating option. You can prepare it ahead and wrap sammies individually or it's easy enough to prepare onsite. The prep time includes chill time for the jam to allow flavors to blend.

Ingredients For grilled chicken sandwiches with strawberry-onion jam & blue cheese

2large red onions, peeled and thinly sliced

2 csliced hulled strawberries,

1/2 tspsalt

1/2 tspfresh thyme leaves

1/4 tspcayenne pepper

1/4 cbalsamic vinegar

1/3 cchopped walnuts
- CHICKEN SANDWICHES

4skinless bones chicken breasts, lightly pounded
-
2 tspsalt
-
2 tspground black pepper
-
4 Tbspextra virgin olive oil

4brioche or potato hamburger buns

4 tspbutter, softened to room temperature

4 Tbspdijon mustard
-
1 cbaby arugula or baby spinach leaves

4 Tbspcrumbled blue cheese
How To Make grilled chicken sandwiches with strawberry-onion jam & blue cheese

1JAM: Melt butter and olive oil together in a large nonstick sauté pan over medium heat. Add the onions to the pan, reduce heat to low, and sauté until slightly cooked. Add strawberries, honey, salt, pepper, thyme and cayenne pepper; stir to combine. Continue to cook over low heat for 15 minutes, stirring often to make sure sugars do not burn. Add vinegar, stir and simmer, stirring periodically for an additional 30 minutes. Stir in chopped walnuts. Cool completely and chill in the refrigerator for 2 hours. This step can be done up to two days ahead.

2Chicken Sandwiches: Preheat grill of choice until hot. Sprinkle both sides of chicken with salt and pepper; drizzle olive oil over both sides. Place on grill and grill for 4-5 on each side, or just until chicken is cooked through. Butter both cut sides of buns and lightly toast on grill just until light golden brown. Spread Dijon mustard on bottoms of buns, top with arugula or spinach, blue cheese crumbles and chicken. Spread 1-2 teaspoons of jam over chicken and replace bun top.
